Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of corn kernels
- 1/4 cup of chopped green onions
- 1/4 cup of chopped red bell pepper
- 1 egg, beaten
- 1/2 cup of milk
- Vegetable oil for frying
Instructions
- In a large bowl, combine 1 cup of flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add 1/2 cup of corn kernels, 1/4 cup of chopped green onions, and 1/4 cup of chopped red bell pepper to the bowl and mix well.
- In a separate bowl, whisk together 1 egg and 1/2 cup of milk.
- Pour the egg and milk mixture into the dry ingredients and stir until just combined.
- Chop the peeled and deveined shrimp into small pieces and fold them into the batter.
- In a large skillet, heat vegetable oil over medium-high heat.
- Drop spoonfuls of the shrimp batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the shrimp fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
