  • 1/2 cup frozen peas and carrots, thawed

  • 2 cloves garlic, minced

  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add diced onion and minced garlic, and cook until fragrant and onions are translucent.
  • Add shrimp to the skillet and cook until pink and opaque, then remove from the skillet and set aside.
  • Push the onion and garlic to one side of the skillet, and pour the beaten eggs onto the other side. Scramble the eggs until cooked through, then mix with the onion and garlic.
  • Add the cooked rice, thawed peas and carrots, soy sauce, oyster sauce, and sesame oil to the skillet. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
  • Add the cooked shrimp back to the skillet and stir to combine with the rice mixture. Season with salt and pepper to taste.
