Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tablespoons of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- Salt and pepper to taste
- 2 cups of cooked rice
- 1 avocado, sliced
- 1/4 cup of chopped cilantro
- Lime wedges for serving
Instructions
- In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and half of the spice mixture. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onions, and sprinkle with the remaining spice mixture. Sauté for 5-7 minutes until the vegetables are tender and slightly charred.
- To assemble the bowls, divide the cooked rice among 4 bowls. Top with the sautéed vegetables and shrimp. Garnish with sliced avocado, chopped cilantro, and lime wedges.
- Serve immediately and enjoy!
