Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and half of the spice mixture. Cook for 2-3 minutes on each side until the shrimp is pink and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onions, and sprinkle with the remaining spice mixture. Sauté for 5-7 minutes until the vegetables are tender and slightly charred.
  • To assemble the bowls, divide the cooked rice among 4 bowls. Top with the sautéed vegetables and shrimp. Garnish with sliced avocado, chopped cilantro, and lime wedges.
  • Serve immediately and enjoy!
