  • 1 pound of shrimp, peeled and deveined
  • 1 tablespoon of olive oil
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh cilantro
  • 1 package of store-bought empanada dough
  • 1 egg, beaten (for egg wash)

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté until softened, about 3-4 minutes.
  • Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes.
  • Stir in the cumin, paprika, salt, and pepper, and cook for an additional 1-2 minutes.
  • Remove the skillet from the heat and stir in the chopped cilantro. Allow the shrimp mixture to cool slightly.
  • Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Roll out the empanada dough and cut it into circles using a round cutter or a small plate as a guide.
  • Place a spoonful of the shrimp mixture in the center of each dough circle.
  • Brush the edges of the dough with the beaten egg, then fold the dough over the filling to create a half-moon shape. Press the edges firmly to seal the empanadas.
  • Place the sealed empanadas on the prepared baking sheet and brush the tops with the remaining beaten egg.
  • Bake in the preheated oven for 15-20 minutes, or until the empanadas are golden brown and crispy.
  • Allow the empanadas to cool for a few minutes before serving. Enjoy!
