Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 1 cup of cooked rice
- 1 can of black beans, drained and rinsed
- 1 cup of corn kernels
- 1 cup of cherry tomatoes, halved
- 1 avocado, sliced
- 1/4 cup of chopped cilantro
- 1 lime, cut into wedges
- Sour cream and salsa for serving
Instructions
- In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and sprinkle the spice mixture over them. Cook for 2-3 minutes on each side until they are pink and opaque. Remove from the skillet and set aside.
- In the same skillet, add the black beans and corn. Cook for 2-3 minutes until heated through.
- To assemble the burrito bowls, divide the rice among 4 bowls. Top with the black beans and corn mixture, cooked shrimp, cherry tomatoes, avocado slices, and chopped cilantro.
- Serve with lime wedges, sour cream, and salsa on the side.
