Shrimp and Spinach Ravioli with Asiago Cheese
Created by: Howcan Team
Ingredients
- 1 pound of fresh shrimp, peeled and deveined
- 1 cup of fresh spinach, chopped
- 1/2 cup of grated Asiago cheese
- 1/4 cup of ricotta cheese
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 package of square wonton wrappers
- 1 egg, beaten
- 2 tablespoons of olive oil
- 1 cup of marinara sauce
- Fresh basil leaves for garnish
Instructions
- In a food processor, combine 1 pound of shrimp, 1 cup of chopped spinach, 1/2 cup of grated Asiago cheese, 1/4 cup of ricotta cheese, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Pulse until the mixture is finely chopped and well combined.
- Lay out several wonton wrappers on a clean, dry surface. Place a small spoonful of the shrimp and spinach mixture in the center of each wrapper. Brush the edges of the wrapper with beaten egg, then fold the wrapper over the filling to create a triangle. Press the edges firmly to seal. Repeat with the remaining wrappers and filling.
- Bring a large pot of salted water to a boil. Carefully add the ravioli to the boiling water and cook for 2-3 minutes, or until they float to the surface. Remove the ravioli with a slotted spoon and drain on a paper towel.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the cooked ravioli to the skillet and cook for 1-2 minutes on each side, or until lightly browned.
- Serve the ravioli with marinara sauce and garnish with fresh basil leaves. Enjoy!
