Instructions

  • In a food processor, combine 1 pound of shrimp, 1 cup of chopped spinach, 1/2 cup of parmesan cheese, 1/4 cup of ricotta cheese, 1 egg, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Pulse until well combined.
  • Lay out the wonton wrappers on a clean surface. Place a small spoonful of the shrimp and spinach mixture in the center of each wrapper. Brush the edges with water and fold over to create a triangle. Press the edges to seal. Repeat with the remaining wrappers and filling.
  • Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes, or until they float to the top. Remove with a slotted spoon and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for 1 minute. Add 1 cup of marinara sauce and bring to a simmer.
  • Add the cooked ravioli to the skillet and gently toss to coat with the sauce. Cook for an additional 2-3 minutes, until heated through.
