Instructions

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant. Pour in the vodka and let it simmer for 2 minutes to cook off the alcohol.
  • Stir in the crushed tomatoes and heavy cream. Bring the sauce to a simmer and let it cook for 5-7 minutes until slightly thickened.
  • Add the cooked penne pasta and shrimp to the skillet, tossing to coat everything in the sauce. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
