Spinach Shrimp Alfredo

Ingredients
- 1 pound of shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- 4 cups of fresh spinach
- Salt and pepper to taste
- 1/4 teaspoon of red pepper flakes (optional)
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add 4 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
- Add 1 pound of shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, pour in 1 cup of heavy cream and bring to a simmer.
- Stir in 1 cup of grated Parmesan cheese and continue to simmer until the sauce thickens, about 3-4 minutes.
- Add 4 cups of fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Season the sauce with salt, pepper, and 1/4 teaspoon of red pepper flakes if desired.
- Return the cooked shrimp to the skillet and toss to coat in the sauce.
- Serve the spinach shrimp alfredo immediately and enjoy!
