Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add 4 cloves of minced garlic and sauté for 1-2 minutes until fragrant.
  • Add 1 pound of shrimp to the skillet and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, pour in 1 cup of heavy cream and bring to a simmer.
  • Stir in 1 cup of grated Parmesan cheese and continue to simmer until the sauce thickens, about 3-4 minutes.
  • Add 4 cups of fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Season the sauce with salt, pepper, and 1/4 teaspoon of red pepper flakes if desired.
  • Return the cooked shrimp to the skillet and toss to coat in the sauce.
  • Serve the spinach shrimp alfredo immediately and enjoy!
