Mushroom and Carrot Shepherd's Pie

Ingredients
- 1 1/2 pounds ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 carrots, diced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 2 tablespoons tomato paste
- Salt and pepper to taste
- 4 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the sliced mushrooms, diced carrots, and frozen peas. Cook for another 5 minutes.
- Add the dried thyme, dried rosemary, and all-purpose flour to the skillet. Stir to combine and cook for 1-2 minutes.
- Pour in the beef broth and tomato paste. Stir well and simmer for 5-7 minutes until the mixture thickens. Season with salt and pepper to taste.
- Transfer the beef and vegetable mixture to a 9x13 inch baking dish. Spread the mashed potatoes over the top, covering the filling completely.
- Sprinkle the shredded cheddar cheese over the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the filling is bubbling and the top is golden brown.
- Allow to cool for a few minutes before serving. Enjoy!
