  • Add the chopped onion and minced garlic to the skillet and cook until softened, about 5 minutes.
  • Stir in the sliced mushrooms, diced carrots, and frozen peas. Cook for another 5 minutes.
  • Add the dried thyme, dried rosemary, and all-purpose flour to the skillet. Stir to combine and cook for 1-2 minutes.
  • Pour in the beef broth and tomato paste. Stir well and simmer for 5-7 minutes until the mixture thickens. Season with salt and pepper to taste.
  • Transfer the beef and vegetable mixture to a 9x13 inch baking dish. Spread the mashed potatoes over the top, covering the filling completely.
  • Sprinkle the shredded cheddar cheese over the mashed potatoes.
  • Bake in the preheated oven for 25-30 minutes, or until the filling is bubbling and the top is golden brown.
