Ingredients
- 1 block of firm tofu, drained and cut into cubes
- 2 tablespoons of cornstarch
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of sesame oil
- 2 tablespoons of honey
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 2 green onions, sliced
- 2 tablespoons of sesame seeds
- Cooked rice or noodles, for serving
Instructions
- In a large bowl, toss the tofu cubes with 2 tablespoons of cornstarch until evenly coated.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of sesame oil, 2 tablespoons of honey, grated ginger, and minced garlic.
- Heat a large skillet over medium-high heat and add the tofu cubes. Cook for 5-7 minutes, turning occasionally, until crispy and golden brown. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet with the vegetables. Pour the soy sauce mixture over the tofu and vegetables, and toss to coat evenly. Cook for an additional 2-3 minutes until heated through.
