Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1/2 cup of cashews
- 2 tablespoons of sesame oil
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of maple syrup
- 1 tablespoon of cornstarch
- 1/4 cup of water
- 2 green onions, chopped
- 1 tablespoon of sesame seeds
- Cooked rice or quinoa, for serving
Instructions
- In a small bowl, whisk together the soy sauce, rice vinegar, maple syrup, cornstarch, and water. Set aside.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- Add the remaining 1 tablespoon of sesame oil to the skillet. Add the minced garlic and grated ginger, and stir-fry for 1 minute until fragrant.
- Add the broccoli florets to the skillet and stir-fry for 3-4 minutes until tender-crisp.
- Return the crispy tofu to the skillet, and add the cashews. Pour the prepared sauce over the tofu and broccoli. Stir well to coat everything in the sauce, and cook for 2-3 minutes until the sauce thickens.
- Sprinkle with chopped green onions and sesame seeds. Remove from heat.
- Serve the sesame tofu and broccoli stir-fry over cooked rice or quinoa. Enjoy!
