Sesame Tofu Stir-fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of cornstarch
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of grated ginger
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 2 green onions, sliced
- 2 tablespoons of sesame seeds
- Cooked rice or noodles, for serving
Instructions
- In a bowl, toss the cubed tofu with 2 tablespoons of cornstarch until evenly coated.
- In a separate bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 1 tablespoon of rice vinegar, 1 tablespoon of honey, grated ginger, and minced garlic to make the sauce.
- Heat a large skillet or wok over medium-high heat and add a little oil. Add the coated tofu and cook until crispy and golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the sliced red bell pepper, broccoli florets, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the crispy tofu to the skillet and pour the sauce over the tofu and vegetables. Toss everything together to coat evenly and cook for another 2-3 minutes until the sauce thickens slightly.
- Sprinkle with sliced green onions and sesame seeds. Serve the sesame tofu stir-fry over cooked rice or noodles. Enjoy!
