Spicy Sesame Ginger Tofu Stir-Fry

Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 2 tablespoons of sesame oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1/2 cup of sliced carrots
- 3 green onions, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of honey
- 2 tablespoons of spicy chili sauce
- 1 tablespoon of cornstarch
- 2 tablespoons of water
- 2 tablespoons of sesame seeds
- Cooked rice or noodles for serving
Instructions
- In a small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to make a slurry. Set aside.
- In a separate bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of honey, and 2 tablespoons of spicy chili sauce. Set aside.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- Add the remaining 1 tablespoon of sesame oil to the skillet. Add the sliced red and yellow bell peppers, broccoli florets, and sliced carrots. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to the side of the skillet and add the minced garlic and grated ginger to the center. Cook for 1 minute until fragrant.
- Pour the soy sauce mixture into the skillet and bring to a simmer. Add the cornstarch slurry and stir until the sauce thickens.
- Add the cooked tofu back into the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes to heat the tofu through.
- Sprinkle with chopped green onions and sesame seeds. Serve the spicy sesame ginger tofu stir-fry over cooked rice or noodles. Enjoy!
