  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 4 cups mixed salad greens
  • 2 green onions, thinly sliced
  • 2 tablespoons sesame seeds
  • Salt and pepper to taste

  • 2 tablespoons sesame seeds

Instructions

  • In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, 1 tablespoon honey, grated ginger, and minced garlic to make the dressing. Set aside.
  • In a large non-stick skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the cubed tofu and cook for 8-10 minutes, turning occasionally, until golden and crispy. Remove from the heat and set aside.
  • In a large salad bowl, combine the mixed salad greens, sliced red bell pepper, shredded carrots, and green onions.
  • Add the cooked tofu to the salad bowl and drizzle the sesame ginger dressing over the salad. Toss gently to coat all the ingredients with the dressing.
  • Sprinkle sesame seeds over the salad and season with salt and pepper to taste.
