Ingredients
- 1 pound snap peas, trimmed
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 tablespoons sesame oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat.
- Add the snap peas and bell peppers to the skillet and stir-fry for 3-4 minutes, or until the vegetables are tender-crisp. Season with salt and pepper to taste. Remove the vegetables from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of sesame oil, garlic, and ginger. Stir-fry for 1 minute, or until fragrant.
- In a small bowl, whisk together the soy sauce, rice vinegar, and honey. Pour the sauce into the skillet and bring to a simmer, stirring constantly for 1-2 minutes.
- Return the snap peas and bell peppers to the skillet and toss to coat with the sauce. Cook for an additional 1-2 minutes, or until heated through.
- Sprinkle the stir-fry with sesame seeds and serve hot. Enjoy!
