  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup edamame, shelled
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup edamame, shelled
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon grated ginger
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, honey, and minced garlic to make the dressing. Set aside.
  • In a large mixing bowl, combine cooked quinoa, red bell pepper, shredded carrots, edamame, green onions, and cilantro. Toss to combine.
  • Pour the sesame ginger dressing over the quinoa mixture and toss until everything is well coated. Season with salt and pepper to taste.
  • Divide the quinoa mixture into serving bowls and sprinkle with sesame seeds. Serve immediately and enjoy!
