Ingredients
- 1 cup of quinoa
- 2 cups of water
- 1 tablespoon of vegetable oil
- 1 package (8 oz) of seitan, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1 cup of snap peas
- 3 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 1/4 cup of soy sauce
- 2 tablespoons of hoisin sauce
- 1 tablespoon of cornstarch
- 1/4 cup of water
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
- Rinse 1 cup of quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
- In a small bowl, whisk together 1/4 cup of water, 1 tablespoon of cornstarch, 1/4 cup of soy sauce, and 2 tablespoons of hoisin sauce. Set aside.
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced seitan and stir-fry for 3-4 minutes until lightly browned. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, broccoli, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
- Add the minced garlic and ginger to the skillet and stir-fry for another 1-2 minutes.
- Return the seitan to the skillet and pour the sauce over the stir-fry. Cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the ingredients.
- Season with salt and pepper to taste. Serve the stir-fry over the cooked quinoa, garnished with sesame seeds. Enjoy!
