Ingredients
- 1 pound seitan, sliced into cutlets
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup vegan butter
- 1 cup sliced mushrooms
- 1/2 cup Marsala wine
- 1/2 cup vegetable broth
- 2 tablespoons chopped fresh parsley
Instructions
- In a shallow dish, mix together 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Dredge the seitan cutlets in the seasoned flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seitan cutlets to the skillet and cook for 3-4 minutes on each side, until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt 1/2 cup of vegan butter over medium heat. Add the sliced mushrooms and cook for 5 minutes, until they are tender and golden brown.
- Pour in 1/2 cup of Marsala wine and 1/2 cup of vegetable broth, stirring to combine. Bring the mixture to a simmer.
- Return the seitan cutlets to the skillet, spooning the mushroom Marsala sauce over the top. Cook for an additional 5 minutes, allowing the flavors to meld together.
- Sprinkle with 2 tablespoons of chopped fresh parsley before serving.
