Ingredients
- 4 pieces of steak (6 oz each)
- 1 cup wild rice
- 1 bunch of asparagus, trimmed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/4 cup balsamic vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Cook the wild rice according to package instructions.
- In a small bowl, mix together the garlic powder, paprika, dried thyme, salt, and pepper. Rub the spice mixture onto both sides of the steaks.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the steaks for 3-4 minutes on each side for medium-rare, or longer to desired doneness. Remove from the skillet and let rest for 5 minutes.
- While the steaks are resting, toss the trimmed asparagus with 1 tablespoon of olive oil, salt, and pepper. Place on a baking sheet and roast in the preheated oven for 10-12 minutes, or until tender and slightly charred.
- In the same skillet used for the steaks, pour in the balsamic vinegar and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the pan to make a sauce.
- To serve, divide the cooked wild rice among 4 plates. Place a seared steak on top of the rice and arrange the roasted asparagus alongside. Drizzle the balsamic sauce over the steak and enjoy!
