Instructions

  • Preheat the oven to 425°F (220°C).
  • Pat the scallops dry with paper towels and season with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  • Place the trimmed asparagus on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the preheated oven for 10-12 minutes, or until tender but still crisp.
  • In the same skillet used for the scallops, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the fresh lemon juice and season with salt and pepper to taste.
  • Return the seared scallops to the skillet, coating them with the garlic butter sauce. Cook for an additional 1-2 minutes, then remove from heat.
  • Serve the seared scallops with the garlic butter sauce alongside the roasted asparagus. Enjoy!
