Ingredients
- 1 pound sea scallops
- 1 bunch asparagus, trimmed
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the scallops dry with paper towels and season with salt and pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the scallops and sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- Place the trimmed asparagus on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast in the preheated oven for 10-12 minutes, or until tender but still crisp.
- In the same skillet used for the scallops, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the fresh lemon juice and season with salt and pepper to taste.
- Return the seared scallops to the skillet, coating them with the garlic butter sauce. Cook for an additional 1-2 minutes, then remove from heat.
- Serve the seared scallops with the garlic butter sauce alongside the roasted asparagus. Enjoy!
