Instructions

  • Pat the scallops dry with paper towels and season with salt and pepper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add the asparagus to the skillet and cook for 5-7 minutes, or until tender and slightly charred. Remove from the skillet and set aside.
  • In the same skillet, add 2 tablespoons of unsalted butter and minced garlic. Cook for 1-2 minutes until the garlic is fragrant.
  • Push the garlic butter to one side of the skillet and add the seasoned scallops in a single layer. Sear for 2-3 minutes on each side until golden brown and opaque. Remove from the skillet and set aside.
  • Divide the roasted asparagus among 4 plates and top with the seared scallops.
  • In the same skillet, melt the remaining 2 tablespoons of unsalted butter and drizzle over the scallops and asparagus.
  • Finish the dish by drizzling balsamic glaze over the scallops and asparagus.
  • Serve immediately and enjoy!
