  • 4 medium potatoes, diced

  • Salt and pepper to taste

  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
  • Add the sliced sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil.
  • Add the diced potatoes and cook until golden and tender, about 10 minutes, stirring occasionally.
  • Add the chopped onion, minced garlic, and sliced bell peppers to the skillet. Cook for an additional 5 minutes, or until the vegetables are tender.
  • Return the cooked sausage to the skillet and stir to combine with the vegetables.
  • Season the skillet with paprika, dried thyme, salt, and pepper. Stir well to evenly distribute the seasonings.
  • Cook for another 2-3 minutes to allow the flavors to meld together.
  • Garnish with fresh parsley before serving.
