Ingredients
- 1 lb of sausage, sliced
- 4 medium potatoes, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tbsp of olive oil
- 1 tsp of paprika
- 1/2 tsp of dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat.
- Add the sliced sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
- In the same skillet, add the remaining 1 tbsp of olive oil.
- Add the diced potatoes and cook until golden and tender, about 10 minutes, stirring occasionally.
