Ingredients
- 1 pound ground sausage
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/4 cup vegetable oil
- 2 eggs
Instructions
- Preheat the oven to 375 degrees F. Grease a 12-cup muffin tin or line with paper liners.
- In a skillet, cook the ground sausage over medium heat until browned. Remove from heat and let it cool.
- In a large bowl, combine 2 cups of flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Stir in 1 cup of shredded cheddar cheese and the cooled cooked sausage.
- In a separate bowl, whisk together 1 cup of milk, 1/4 cup of vegetable oil, and 2 eggs.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy warm or at room temperature.
