Ingredients
- 1 pound spicy sausage, casings removed
- 1 cup long-grain white rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the spicy sausage over medium heat, breaking it up with a spoon, until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion, bell pepper, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- Stir in the rice, diced tomatoes, chicken broth, paprika, cayenne pepper, dried thyme, and the cooked spicy sausage. Season with salt and pepper to taste.
