Instructions

  • Preheat the oven to 375°F. Grease a 9x13 inch baking dish.
  • In a large skillet, cook 1 lb of sausage over medium heat until browned. Remove from the skillet and set aside.
  • In the same skillet, add the diced onion, bell pepper, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
  • Stir in 1 cup of white rice, 1 can of diced tomatoes, 2 cups of chicken broth, 1 teaspoon of dried thyme, 1/2 teaspoon of paprika, and salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 5 minutes.
  • Transfer the rice mixture to the prepared baking dish. Sprinkle the cooked sausage on top and cover with foil.
  • Bake for 30 minutes, then remove the foil and sprinkle 1 cup of shredded cheddar cheese on top. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
