- 1 pound of breakfast sausage

- Salt and pepper to taste
- 4 eggs
- 2 tablespoons of chopped fresh parsley
Instructions
- In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8 minutes.
- Remove the cooked sausage from the skillet and set aside.
- In the same skillet, add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they are golden and tender.
- Add the diced onion, bell pepper, and minced garlic to the skillet with the potatoes and cook for an additional 5 minutes, until the vegetables are softened.
- Stir in the cooked sausage, paprika, dried thyme, and season with salt and pepper to taste. Cook for another 2-3 minutes to allow the flavors to meld together.
