Instructions

  • Add the chopped onion and minced garlic to the pot and cook for 2-3 minutes until the onion is translucent.
  • Stir in the diced carrots and celery, and cook for another 5 minutes, stirring occasionally.
  • Add the rinsed lentils, chicken or vegetable broth, diced tomatoes, dried thyme, and paprika to the pot. Bring the soup to a boil, then reduce the heat to low and let it simmer, covered, for 25-30 minutes or until the lentils are tender.
  • Season the soup with salt and pepper to taste.
  • Serve the spicy sausage and lentil soup hot, garnished with fresh parsley.
