Ingredients
- 4 large eggs
- 4 breakfast sausage links
- 1/2 cup shredded cheddar cheese
- 2 large flour tortillas
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a skillet, cook the breakfast sausage links according to the package instructions. Once cooked, remove from the skillet and set aside.
- In the same skillet, heat 1 tablespoon of olive oil over medium heat.
- Crack the eggs into the skillet and season with salt and pepper. Scramble the eggs until fully cooked.
- Lay out the flour tortillas and divide the scrambled eggs evenly between the two tortillas.
- Place 2 cooked sausage links on top of the eggs on each tortilla.
- Sprinkle 1/4 cup of shredded cheddar cheese over the sausage on each tortilla.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form a wrap.
- If desired, heat a clean skillet over medium heat and place the wraps seam-side down to lightly toast and melt the cheese, about 1-2 minutes per side.
