Instructions

  • In a skillet, cook the breakfast sausage links according to the package instructions. Once cooked, remove from the skillet and set aside.
  • In the same skillet, heat 1 tablespoon of olive oil over medium heat.
  • Crack the eggs into the skillet and season with salt and pepper. Scramble the eggs until fully cooked.
  • Lay out the flour tortillas and divide the scrambled eggs evenly between the two tortillas.
  • Place 2 cooked sausage links on top of the eggs on each tortilla.
  • Sprinkle 1/4 cup of shredded cheddar cheese over the sausage on each tortilla.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form a wrap.
  • If desired, heat a clean skillet over medium heat and place the wraps seam-side down to lightly toast and melt the cheese, about 1-2 minutes per side.
