  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions

  • In a large mixing bowl, combine 2 cups of cooked and shredded chicken breast, 1 cup of shredded cheddar cheese, 1/2 cup of diced red bell pepper, 1/2 cup of diced green bell pepper, 1/4 cup of diced red onion, 1/4 cup of chopped fresh cilantro, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Lay out 4 large flour tortillas on a clean surface. Divide the chicken and vegetable mixture evenly among the tortillas, spreading it over half of each tortilla. Fold the other half of the tortilla over the filling to create a half-moon shape.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place one or two quesadillas in the skillet, cooking for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more olive oil to the skillet as needed.
  • Remove the quesadillas from the skillet and let them cool for a minute before slicing each into 3 wedges.
  • Serve the Santa Fe Chicken Quesadillas with your favorite toppings such as sour cream, salsa, or guacamole. Enjoy!
