Ingredients
- 4 salmon fillets (6 oz each)
- 1/2 cup soy sauce
- 1/4 cup mirin
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 tsp minced garlic
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1 carrot, julienned
- 4 green onions, sliced
- Cooked white rice, for serving
Instructions
- In a small bowl, whisk together 1/2 cup soy sauce, 1/4 cup mirin, 2 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp grated ginger, and 1 tsp minced garlic to make the teriyaki sauce.
- Heat 1 tbsp of vegetable oil in a large skillet over medium-high heat.
