Ingredients
- 4 salmon fillets (6 oz each)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons melted butter
- 2 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Place the mixed vegetables on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat, then roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
- While the vegetables are roasting, season the salmon fillets with salt and pepper.
- In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the salmon fillets, skin side down, and cook for 4-5 minutes per side, or until golden and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the melted butter and minced garlic. Cook for 1-2 minutes, or until the garlic is fragrant.
- Stir in the lemon juice and zest, then bring the mixture to a simmer. Cook for 2-3 minutes, or until slightly reduced and thickened.
- Return the cooked salmon fillets to the skillet, spooning the lemon butter sauce over the top. Cook for an additional 1-2 minutes to heat through.
- To serve, divide the roasted vegetables among plates and top with the salmon fillets. Drizzle any remaining lemon butter sauce over the salmon, and garnish with chopped fresh parsley.
