Salmon Burgers

Ingredients
- 1 lb of fresh salmon fillet, skin removed
- 1/4 cup of breadcrumbs
- 1/4 cup of finely chopped red onion
- 1/4 cup of chopped fresh parsley
- 1 egg
- 1 tablespoon of Dijon mustard
- 1 tablespoon of lemon juice
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 hamburger buns
- Lettuce, tomato, and any other desired toppings
Instructions
- Cut the salmon fillet into small chunks and place them in a food processor. Pulse until the salmon is finely chopped, but not pureed.
- In a large bowl, combine the chopped salmon, breadcrumbs, red onion, parsley, egg, Dijon mustard, lemon juice, salt, and pepper. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each into a patty.
- Heat a grill or skillet over medium-high heat. Add a little oil to prevent sticking.
- Cook the salmon patties for 3-4 minutes on each side, or until they are cooked through and golden brown on the outside.
- Toast the hamburger buns on the grill or in a toaster.
- Assemble the burgers by placing a salmon patty on each bun, and topping with lettuce, tomato, and any other desired toppings.
- Serve the salmon burgers immediately and enjoy!
