Instructions

  • Cook the penne pasta according to package instructions. Drain and set aside.
  • Season the salmon fillets with salt and pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until cooked through. Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the chopped onion and garlic, and sauté until softened.
  • Carefully add the vodka to the skillet and let it simmer for 2-3 minutes, allowing the alcohol to cook off.
  • Stir in the crushed tomatoes and heavy cream. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
  • Add the cooked penne pasta to the skillet and toss to coat in the sauce.
  • Stir in the grated Parmesan cheese until melted and well combined.
  • Place the cooked salmon fillets on top of the pasta and sauce in the skillet.
