Instructions

  • Preheat the oven to 375°F (190°C).
  • In a small bowl, mix together 3 tbsp of chopped rosemary, 4 cloves of minced garlic, 2 tbsp of olive oil, and salt and pepper to taste.
  • Rub the rosemary mixture all over the pork loin, ensuring it is evenly coated.
  • Place the pork loin in a roasting pan and roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 145°F (63°C).
  • While the pork is roasting, prepare the couscous. In a medium saucepan, bring 2 1/2 cups of chicken broth to a boil.
  • Stir in 1 1/2 cups of couscous, cover the saucepan, and remove it from the heat. Let it sit for 5 minutes, then fluff the couscous with a fork.
  • Once the pork is done, remove it from the oven and let it rest for 10 minutes before slicing.
  • Serve the sliced rosemary roasted pork with the fluffy couscous, garnished with 1/4 cup of chopped fresh parsley. Enjoy!
