Instructions

  • Preheat the oven to 375°F (190°C).
  • Rinse the chicken and pat dry with paper towels. Place the chicken in a roasting pan.
  • In a small bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of fresh rosemary, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Rub the mixture all over the chicken, including under the skin.
  • Roast the chicken in the preheated oven for 45 minutes.
  • In a small saucepan, combine 1/4 cup of honey, 2 tablespoons of soy sauce, and 2 cloves of minced garlic. Heat over medium heat, stirring constantly, until the honey is melted and the glaze is well combined.
  • After the chicken has roasted for 45 minutes, brush the honey glaze all over the chicken. Return the chicken to the oven and continue roasting for another 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving. Serve the rosemary roasted chicken with the remaining honey glaze on the side. Enjoy!
