Ingredients
- 1.5 lbs of boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup of olive oil
- 1/4 cup of fresh orange juice
- 1/4 cup of fresh lemon juice
- 3 tablespoons of balsamic vinegar
- 2 tablespoons of honey
- 3 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 8 skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, whisk together 1/4 cup of olive oil, 1/4 cup of fresh orange juice, 1/4 cup of fresh lemon juice, 3 tablespoons of balsamic vinegar, 2 tablespoons of honey, 3 cloves of minced garlic, 2 tablespoons of chopped rosemary, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Add the cubed chicken to the marinade, making sure it is well coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the soaked skewers.
- Grill the skewers for 12-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the outside.
