Created by: Howcan Team

Ingredients

  • 1 block of extra firm tofu, pressed and cubed
  • 1/4 cup of olive oil
  • 3 cloves of garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon of soy sauce
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 cups of wild rice
  • 4 cups of vegetable broth or water

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together 1/4 cup of olive oil, minced garlic, lemon zest, lemon juice, soy sauce, dried thyme, salt, and black pepper.
  • Place the cubed tofu in a large bowl and pour the marinade over the tofu. Gently toss to coat the tofu evenly with the marinade.
  • Spread the marinated tofu in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the tofu is golden and crispy, flipping once halfway through cooking.
  • While the tofu is roasting, rinse the wild rice under cold water. In a medium saucepan, bring 4 cups of vegetable broth or water to a boil. Add the rinsed wild rice, reduce heat to low, cover, and simmer for 30-40 minutes, or until the rice is tender and the liquid is absorbed.
  • Once the tofu is done, remove it from the oven and let it cool for a few minutes.
  • Serve the roasted lemon garlic tofu over the cooked wild rice and enjoy!

Roasted Lemon Garlic Tofu with Wild Rice is a flavorful and nutritious dish that has its roots in the fusion of Asian and Mediterranean cuisines. This dish gained popularity in the health-conscious food scene due to its high protein content and vibrant flavors. Renowned chefs like Yotam Ottolenghi and Angela Liddon have contributed to its popularity by featuring their own unique versions in their cookbooks and restaurants. The dish typically consists of marinated tofu cubes roasted to perfection with a zesty lemon and garlic marinade, served alongside fluffy wild rice infused with aromatic herbs. The tangy and savory flavors of the tofu complement the nutty and earthy notes of the wild rice, creating a harmonious balance of taste and texture. For the best version of this dish, one should ensure that the tofu is properly marinated to absorb the citrusy and garlicky flavors, and the wild rice is cooked to a fluffy yet slightly chewy consistency. While this dish is traditionally vegan, some variations may include the addition of roasted vegetables or a drizzle of tahini for an extra layer of creaminess. Today, this dish can be savored in various health-focused restaurants and vegan eateries across the globe, with notable renditions found in cities like Los Angeles, London, and Melbourne. Whether enjoyed as a main course or a side dish, Roasted Lemon Garlic Tofu with Wild Rice continues to captivate food enthusiasts with its wholesome ingredients and delightful taste.
