  • 3 cloves of garlic, minced
  • Zest and juice of 1 lemon
  • 1 tablespoon of soy sauce
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 cups of wild rice
  • 4 cups of vegetable broth or water

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together 1/4 cup of olive oil, minced garlic, lemon zest, lemon juice, soy sauce, dried thyme, salt, and black pepper.
  • Place the cubed tofu in a large bowl and pour the marinade over the tofu. Gently toss to coat the tofu evenly with the marinade.
  • Spread the marinated tofu in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the tofu is golden and crispy, flipping once halfway through cooking.
  • While the tofu is roasting, rinse the wild rice under cold water. In a medium saucepan, bring 4 cups of vegetable broth or water to a boil. Add the rinsed wild rice, reduce heat to low, cover, and simmer for 30-40 minutes, or until the rice is tender and the liquid is absorbed.
  • Once the tofu is done, remove it from the oven and let it cool for a few minutes.
  • Serve the roasted lemon garlic tofu over the cooked wild rice and enjoy!
