Ingredients
- 3 ripe avocados, peeled and pitted
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 2 roma tomatoes, seeded and diced
- 1 lime, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 head of garlic
- 1/4 teaspoon cayenne pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Slice off the top of the head of garlic to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30 minutes. Allow to cool.
- In a medium bowl, mash the avocados with a fork until slightly chunky.
- Squeeze the roasted garlic cloves out of their skins and mash them into the avocado.
- Stir in the red onion, cilantro, tomatoes, and lime juice. Season with salt and black pepper, and mix well.
- Sprinkle the guacamole with cayenne pepper before serving.
- Serve with tortilla chips or vegetable sticks, and enjoy!
