Instructions

  • In a small bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of honey, 1 teaspoon of dried thyme, 1 teaspoon of paprika, and salt and pepper to taste.
  • Place the chicken thighs in a large baking dish and brush the olive oil mixture over them, making sure to coat both sides.
  • Arrange the sliced apples around the chicken in the baking dish.
  • In a separate baking dish, place the cubed sweet potatoes and drizzle with the remaining olive oil mixture, tossing to coat evenly.
  • Place both baking dishes in the preheated oven and roast for 45-50 minutes, or until the chicken is cooked through and the sweet potatoes are tender, stirring the sweet potatoes halfway through cooking.
  • Once done, remove the dishes from the oven and let the chicken rest for 5 minutes before serving.
  • Serve the roasted chicken with apples alongside the roasted sweet potatoes and enjoy!
