Ingredients
- 1 cup of raw walnuts
- 1 cup of pitted dates
- 3 tablespoons of raw cacao powder
- 1/4 teaspoon of sea salt
- 1/2 teaspoon of pure vanilla extract
- 2 tablespoons of unsweetened shredded coconut (optional, for coating)
Instructions
- In a food processor, blend 1 cup of raw walnuts until finely ground.
- Add 1 cup of pitted dates, 3 tablespoons of raw cacao powder, 1/4 teaspoon of sea salt, and 1/2 teaspoon of pure vanilla extract to the food processor with the ground walnuts.
- Process the mixture until it forms a thick, sticky dough.
- Using your hands, roll the dough into small bite-sized balls and place them on a plate.
- If desired, roll the brownie bites in 2 tablespoons of unsweetened shredded coconut to coat the outside.
- Refrigerate the brownie bites for at least 30 minutes to firm up before serving.
