  • 8 oz of penne pasta
  • 1 lb of chicken breast, sliced into thin strips
  • 2 tbsp of olive oil
  • 4 cloves of garlic, minced
  • 1/2 cup of sliced jalapenos
  • 1/2 cup of sliced red bell peppers
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of hot sauce
  • 1/4 cup of chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  • Cook the penne pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp of olive oil. Add the minced garlic, sliced jalapenos, and sliced red bell peppers. Saute for 2-3 minutes until the vegetables are slightly softened.
  • Pour in the heavy cream and hot sauce, stirring to combine. Bring the mixture to a simmer.
  • Add the cooked penne pasta and cooked chicken back into the skillet. Stir to coat everything in the spicy cream sauce.
  • Sprinkle the grated Parmesan cheese over the pasta and stir until the cheese is melted and the sauce is thickened.
  • Season with salt and pepper to taste. Stir in the chopped cilantro.
