Ingredients
- 2 cups of raisin bran cereal
- 1 1/4 cups of all-purpose flour
- 1/2 cup of brown sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1 cup of buttermilk
- 1/4 cup of vegetable oil
- 1 egg
Instructions
- Preheat the oven to 400°F (200°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large bowl, combine 2 cups of raisin bran cereal, 1 1/4 cups of all-purpose flour, 1/2 cup of brown sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt.
- In a separate bowl, whisk together 1 cup of buttermilk, 1/4 cup of vegetable oil, and 1 egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
