Instructions

  • Rinse 1 cup of quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
  • In a large skillet or wok, heat 2 tablespoons of olive oil over medium-high heat. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until fragrant.
  • Add the sliced bell pepper, broccoli florets, sliced carrots, and frozen peas to the skillet. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.
  • In a small bowl, whisk together 1/4 cup of soy sauce, 1 tablespoon of sesame oil, and 1 teaspoon of grated ginger. Pour the sauce over the vegetables in the skillet and stir to combine.
  • Add the cooked quinoa to the skillet and toss everything together. Cook for an additional 2-3 minutes to heat through.
  • Season with salt and pepper to taste, and sprinkle with chopped green onions before serving.
  • Serve the quinoa stir fry hot and enjoy!
