  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup chopped bell pepper
  • 1/2 cup chopped carrots
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3 minutes.
  • Add the bell pepper, carrots, and peas to the skillet, and cook for another 5 minutes or until the vegetables are tender.
  • Stir in the cooked quinoa and chopped parsley, and season with salt and pepper to taste. Cook for an additional 2-3 minutes to heat through.
  • Serve the quinoa pilaf as a side dish or as a main course. Enjoy!
