Quinoa Pilaf

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup chopped bell pepper
- 1/2 cup chopped carrots
- 1/2 cup frozen peas
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit for 5 minutes, then fluff with a fork.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened, about 3 minutes.
- Add the bell pepper, carrots, and peas to the skillet, and cook for another 5 minutes or until the vegetables are tender.
- Stir in the cooked quinoa and chopped parsley, and season with salt and pepper to taste. Cook for an additional 2-3 minutes to heat through.
- Serve the quinoa pilaf as a side dish or as a main course. Enjoy!
