Ingredients
- 1 cup quinoa
- 2 cups water
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer. In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped onion and cook for 2-3 minutes until translucent. Add the minced garlic and cook for another 1 minute.
- Add the sliced bell pepper, broccoli florets, and carrots to the skillet. Stir-fry for 5-6 minutes until the vegetables are tender-crisp.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, and red pepper flakes. Pour the sauce over the vegetables in the skillet and stir to combine.
- Add the cooked quinoa to the skillet and toss everything together until well combined. Season with salt and pepper to taste.
