Quinoa and Black Bean Burger

Ingredients
- 1 cup cooked quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup finely chopped onion
- 1/4 cup chopped cilantro
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 4 burger buns
- Optional toppings: lettuce, tomato, avocado, salsa
Instructions
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, bread crumbs, chopped onion, cilantro, cumin, chili powder, salt, and black pepper to the bowl. Mix well to combine all the ingredients.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat the olive oil in a skillet over medium heat. Add the quinoa and black bean patties and cook for 4-5 minutes on each side, or until they are golden brown and heated through.
- Toast the burger buns in the skillet or in a toaster.
- Assemble the burgers by placing the quinoa and black bean patties on the bottom half of each bun. Add your choice of toppings such as lettuce, tomato, avocado, and salsa. Top with the other half of the bun.
- Serve the quinoa and black bean burgers immediately and enjoy!
