Queso Fundido, a beloved Mexican dish, has a rich history dating back to the 16th century. Originating in the northern regions of Mexico, this indulgent dish was traditionally made with melted Oaxaca or Chihuahua cheese, flavored with chorizo, and served with warm tortillas. The addition of chorizo, a spicy and flavorful pork sausage, adds a depth of savory goodness to the dish. Renowned chefs and restaurants across Mexico, such as El Cardenal in Mexico City, have perfected the art of making Queso Fundido with chorizo. Today, the best versions of this dish can be found in authentic Mexican eateries, where the key lies in using high-quality cheese and perfectly cooked chorizo to achieve the ultimate gooey, flavorful delight.
