  • 1 cup shredded Oaxaca cheese
  • 1 cup shredded Chihuahua cheese
  • 1/4 cup chopped fresh cilantro
  • Tortilla chips, for serving

  • 1 cup shredded Oaxaca cheese
  • 1 cup shredded Chihuahua cheese
  • 1/4 cup chopped fresh cilantro
  • Tortilla chips, for serving

Instructions

  • Preheat the oven to 375°F.
  • In a large skillet, heat the vegetable oil over medium heat. Add the chorizo and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes.
  • Add the diced onion, minced garlic, diced jalapeno, and diced tomato to the skillet with the chorizo. Cook for an additional 3-4 minutes until the vegetables are softened.
  • Stir in the ground cumin, chili powder, paprika, salt, and black pepper. Cook for 1-2 minutes until fragrant.
  • Remove the skillet from the heat and stir in the shredded Oaxaca and Chihuahua cheeses until melted and well combined.
  • Transfer the queso fundido to a baking dish and place it in the preheated oven. Bake for 10-12 minutes until bubbly and golden brown on top.
  • Remove from the oven and sprinkle with chopped fresh cilantro.
  • Serve the queso fundido with tortilla chips for dipping.
