Queso Fundido with Chorizo

Ingredients
- 1 tablespoon vegetable oil
- 1/2 pound chorizo, casing removed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 tomato, diced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Oaxaca cheese
- 1 cup shredded Chihuahua cheese
- 1/4 cup chopped fresh cilantro
- Tortilla chips, for serving
Instructions
- Preheat the oven to 375°F.
- In a large skillet, heat the vegetable oil over medium heat. Add the chorizo and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes.
- Add the diced onion, minced garlic, diced jalapeno, and diced tomato to the skillet with the chorizo. Cook for an additional 3-4 minutes until the vegetables are softened.
- Stir in the ground cumin, chili powder, paprika, salt, and black pepper. Cook for 1-2 minutes until fragrant.
- Remove the skillet from the heat and stir in the shredded Oaxaca and Chihuahua cheeses until melted and well combined.
- Transfer the queso fundido to a baking dish and place it in the preheated oven. Bake for 10-12 minutes until bubbly and golden brown on top.
- Remove from the oven and sprinkle with chopped fresh cilantro.
- Serve the queso fundido with tortilla chips for dipping.
