Instructions

  • In a separate bowl, mix together 1 cup of milk, 1/2 cup of pumpkin puree, 1 egg, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in 2 tablespoons of chia seeds.
  • Heat a non-stick skillet or griddle over medium heat and brush with some of the melted butter.
  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  • Repeat with the remaining batter, brushing the skillet with more melted butter as needed.
  • Serve the pancakes warm with maple syrup and enjoy!
