Ingredients
- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1 cup milk
- 1/2 cup pumpkin puree
- 1 egg
- 1 teaspoon vanilla extract
- 2 tablespoons chia seeds
- 2 tablespoons butter, melted
Instructions
- In a large bowl, whisk together 1 cup of flour, 2 tablespoons of brown sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 teaspoon of pumpkin pie spice.
- In a separate bowl, mix together 1 cup of milk, 1/2 cup of pumpkin puree, 1 egg, and 1 teaspoon of vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in 2 tablespoons of chia seeds.
- Heat a non-stick skillet or griddle over medium heat and brush with some of the melted butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
- Repeat with the remaining batter, brushing the skillet with more melted butter as needed.
- Serve the pancakes warm with maple syrup and enjoy!
