Ingredients
- 2 cans of young green jackfruit in brine, drained and rinsed
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 cup of vegetable broth
- 1/4 cup of barbecue sauce
- 1 tablespoon of brown sugar
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of cumin
- 1/2 teaspoon of chili powder
- Salt and pepper to taste
- 4 pretzel buns
- 1/4 cup of coleslaw (optional, for serving)
Instructions
- In a large skillet, sauté the diced onion and minced garlic over medium heat until softened, about 5 minutes.
- Add the drained and rinsed jackfruit to the skillet and use a fork to break it apart into smaller pieces, resembling pulled pork.
- Pour in the vegetable broth, barbecue sauce, brown sugar, smoked paprika, cumin, and chili powder. Stir to combine all the ingredients.
- Reduce the heat to low, cover the skillet, and let the jackfruit simmer for 20-25 minutes, stirring occasionally, until it has absorbed the flavors and has a pulled pork-like texture.
- While the jackfruit is simmering, preheat the oven to 350 degrees F. Place the pretzel buns on a baking sheet and warm them in the oven for 5-7 minutes, until they are slightly toasted.
- Once the jackfruit is ready, season with salt and pepper to taste and mix well.
- To assemble the sandwiches, divide the pulled jackfruit mixture evenly among the pretzel buns. Top with coleslaw if desired.
